Was talking to Annmarie about these tonite - thought I'd share the recipe, they are very yummy - even DH who doesnt care for spinach, devours these

Spinach Balls

2 pkgs frozen chopped spinach - cooked and drained VERY well
2 cups crunched packaged stuffing mix
1/2 cup grated parmesean cheese
6 eggs beaten
3/4 cup butter - softened
salf & pepper to taste
1 med onion, chopped and sauteed
1 tsp garlic powder
1/2 tsp. thyme

Mix all ingredients - form into walnut size balls (mix will be goopy)
place balls on cookie sheet, cover with plastic and put in freezer until frozen, then
put frozen balls in ziplock bag and freeze until ready to serve.

preheat oven to 350

put spinach balls on cookie sheet (with sides) bake 20 minutes or until golden brown

makes apx 60 spinach balls

can reheat leftovers in microwave - 10 seconds at a time

oooh...that sounds yummy (and easy - even to me). We are having a Super Bowl party - maybe I'll try to make them :)

mary thanks for posting such a great recipe...i had never heard of them till you told me about them.
I am going to have to try making some this weekend!

I hope you all enjoy them ! I've been making them for about 25 years
I am glad you said that, I thought they were what I made in the 80's..my kids loved them...I am going to try them again. :wink:
